The weather has finally started to change where I live, and it’s starting to feel like fall! It’s crisp and cool in the mornings when I take my kids to the bus stop, and it gets dark earlier in the evenings. My husband works nights, so I’m often on my own for the nighttime routine with my kids. As soon as they’re settled into bed for the night, I love to curl up with a cozy blanket on the couch, and watch all my favorite “girl” shows (the ones my husband won’t watch with me) on Netflix. My current favorite is Good Witch, which is totally sweet and charming and makes me happy! Of course, it’s not a proper TV-binge night without a delicious treat, and that’s where this pumpkin chocolate chip mug cake comes in. It takes just a few minutes to make, dirties only one dish, and tastes fantastic! It’s the perfect dessert for those chilly fall evenings. It’s easy to make more than one serving, depending on how many people you need to serve, but I really like that it’s easy to make a single serving. I’ve included the recipe for a single serving below, but feel free to multiply it by the number of servings you need!

I was inspired by this lovely recipe for pumpkin streusel mug cake on Heather Likes Food, but decided to change things up a little and add in some chocolate. I mean, you really can’t go wrong by combining chocolate and pumpkin, right? The result was a delicious and tender pumpkin cake, with lots of gooey chocolate mixed in. It’s so easy to make, too!

Pumpkin Chocolate Chip Mug Cake

The full recipe is at the bottom of this post, but here’s what you’ll need:

butter sugar vanilla pumpkin puree flour baking powder salt pumpkin pie spice chocolate chips whipped cream and chocolate sauce (optional)

Putting the cake together is simple and easy! You mix everything right in the mug, so there’s only one dish to wash (or two, if you’re nice enough to make a mug for your spouse as well 🙂 ). Once it’s all mixed together, even out the top a little to help it cook evenly, and sprinkle a few extra chocolate chips on top. That step is completely optional, of course, but more chocolate is always a good thing!

Microwave for sixty seconds, then pull it out and marvel that you made a cake in just a few minutes! It should spring back when touched lightly, and look set on top. Look at those beautiful melty chocolate chips!

Now, this next step is optional (although it’s totally necessary in my world). To boost that chocolate flavor and make it even more decadent and delicious, top your warm cake with whipped cream and chocolate sauce! Seriously, how amazing does this cake look?

Each bite is so rich and gooey, and loaded with chocolate and pumpkin flavor. I was a little unsure about what the taste and texture would be like, since I cooked it in the microwave, but I was surprised at how delicious it was! If I didn’t know already, I would never have guessed that it hadn’t been baked in the oven. So so good!

This is the perfect recipe for those late night sweet cravings! You can have a delicious single-serving cake, without heating up the oven or messing up the kitchen. That is a total win in my book!
