Now that my kids are back in school, it’s amazing how much I have been able to accomplish during the day. Suddenly grocery shopping is no longer an ordeal, and a quick trip to the post office doesn’t feel like torture. I’m like a whole new person! I love hanging out with my kids, of course, but they definitely don’t make running errands very fun for me. I’ve been getting back into the groove of weekly menus and shopping lists, and it feels so great to be organized again! I always like to plan a few treats into our menu, mostly because I have a crazy sweet tooth and need a little something sweet every evening after the kids are in bed. These oatmeal peanut butter cookies are a new favorite at my house, and I’ve been making sure to add the ingredients to make them to my shopping list, so I can bake up a batch whenever I need a little peanut butter goodness. Everyone in my family loves them! The dough can be made ahead of time and frozen, so you can just bake a few cookies at a time, or you can make the whole batch at once. They have the absolute best texture and flavor, and I adore them!

I adapted these cookies from a recipe I found on Spaceships and Laserbeams, but I tweaked them just a little to make them even more delicious! The peanut butter chips are the perfect addition to the dough, and bump up that tasty peanut butter flavor even more. These cookies are perfection!

Oatmeal Peanut Butter Cookies

The full recipe is at the bottom of this post, but here’s what you’ll need:

butter peanut butter sugar brown sugar vanilla egg flour baking powder baking soda salt old fashioned oats peanut butter chips chocolate chips

Don’t be scared off by the long(ish) ingredient list for these cookies! They come together in a snap, and they are so easy to make.

Once you’ve got the dough all mixed up, scoop it into one inch balls on a greased or parchment lined baking sheet. Make sure you’re getting some chocolate chips in every bite, because they add so much flavor and deliciousness.

These cookies will spread quite a bit as they bake, so it’s a good idea to give them plenty of space on the baking sheet. Bake them until they’re just golden brown on top. I like to let them cool on the baking sheet for 10 minutes or so after baking  to allow them to firm up, and so they’re easier to move to the cooling rack.

These cookies have the best texture, thanks to the old-fashioned oats! They keep the cookies soft and chewy and completely delicious, even several days after baking. The peanut butter flavor really shines without being overwhelming, and the chocolate chips are a nice touch. You really can’t go wrong with the combination of chocolate and peanut butter!

These cookies will keep well for 3-4 days after baking if stored in an airtight container, but they never seem to last that long at my house! They’re perfect for lunchboxes or after school snacks, and my kids totally love them. If you’re a peanut butter and chocolate fan, then these are definitely the cookies for you!
