Today is Green Day to celebrate St. Patrick’s day at my girls’ school and the kids had to dress in all shades of green. Which is easier said than done for girls, you know!? The only green clothes that I could find at the store were a couple of bright forest green skirts. Or at least, they were the only things I could find that were ridiculously on sale… because let’s face it – the kids are going to wear these skirts once a year for St. Patrick’s Day and that’s pretty much it. So… what on earth do you wear with a green skirt!? My girls wanted to picked the rest of their outfits (and that’s always a gamble…). I’m not going to lie, they looked a little ridiculous walking off to school in their mismatched outfits (but super adorable with their pig tails…). But they were so proud of all their green! And I’m impressed that they actually managed to find enough shades of green in their drawers to be almost entirely green. Or turquoise at least… that’s a shade of green, isn’t it???
I didn’t plan for this post to be about St. Patrick’s Day, but seeing that it’s Green Day at school, it kind of feels appropriate now? Green pasta on green day? What’s better than that? And besides all that, this creamy avocado pasta is DELICIOUS. (Seriously… you need to try it…) There are tons of avocado pasta recipes floating around on Pinterest and I’ve been wanting to try them out for ages! I followed a similar idea as Jo Cooks and added a handful of spinach to it to give it an extra nutrient boost! But you can switch things up for your own tastes!
Creamy Avocado Pasta Recipe
The full printable recipe is at the end of this post, but here’s what you’ll need for the sauce:
Avocado Spinach Basil Lemon Juice Parmesan Cheese Garlic Olive Oil
Such simple and fresh ingredients! You can switch up the recipe however you like. If you find garlic a bit too strong or if you don’t like the idea of adding spinach, just leave it out. (Although, the spinach is pretty healthy and you really can’t taste it, so maybe leave it in?). The main things you need in this recipe are the avocado, the basil, the olive oil and the parmesan cheese. The rest just adds extra flavour. 🙂
Combine all of the ingredients in a mini food processor.
Pulse it until it’s completely smooth. Next time I’m going to try it in my Blendtec to make the sauce even smoother.
Cook the pasta according to package directions. The sauce is a bit thick, so I thinned it out with some reserved pasta water. When you add the sauce to the pasta, I recommend mixing everything together, covering the pot and letting it sit for about 5 minutes. The hot pasta helps mellow out the garlic a bit and it gives it some time for the flavours to combine.

I used freshly grated Parmigiano Reggiano, which was amazing, but I found the sauce needed a touch of salt. If you use the powdered Parmesan cheese that comes in a plastic container, the flavour is much more intense, so you probably won’t need to add any extra salt. Either one tastes delicious and it really just depends what’s easier for you!
Top it with some extra Parmesan cheese and maybe a touch of pepper. Yum!
